Grilled Seasonal Vegetables

Ingredients

  • 1/3 cup (75ml) Balsalmic vinegar
  • 2/3 cup. (150g) olive oil
  • 2 tsp (10ml) fresh minced garlic
  • 2 tsp (10ml) fresh chopped basil
  • 1 tbsp (15ml) honey
  • Use any variety of vegetables you wish: onions, peppers, tomato, eggplant, mushrooms, zucchini etc.

Method

  1. Cut vegetables into uniform sizes, around ¼ inch thick.
  2. Place in bowl and pour marinade over them.
  3. Let sit for 10 minutes, no more.
  4. Drain off excess marinade and place on medium hot grill
  5. Cook until "al dente"
