Holiday Potato Scallop

Ingredients

  • 6 cups peeled, sliced potatoes (1/8" slices)
  • ¼ cup sliced green onions
  • 3 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp dried thyme leaves
  • pinch of white pepper
  • 2 cups half and half
  • 1/3 cup snipped fresh parsley
  • sliced pimiento

Method

  1. In 3-quart (3 L) casserole, combine all ingredients, except half-and-half, parsley and pimiento. 
  2. Pour half-and-half over potato mixture. 
  3. Toss gently to coat. 
  4. Cover. Microwave at high for 6 minutes. 
  5. Microwave at 50% (Medium) for 25 to 40 minutes longer, or until potatoes are tender and sauce is thickened, stirring twice.
  6. Spoon potatoes into serving dish. 
  7. Sprinkle parsley in wreath shape over potatoes. 
  8. Arrange pimiento to form bow on wreath.
