Green Beans with Pecans
Ingredients
- 1 lb fresh green beans
- 1/2 tsp finely snipped dried chipotle pepper
- 2 tsp garlic-flavored olive oil
- 1/2 cup pecan halves, coarsely chopped
Method
- In a saucepan cook fresh green beans and chipotle pepper, covered, in a small amount of lightly salted water for 5 to 10 minutes or until just crisp-tender.
- Drain.
- Meanwhile, in a large skillet, heat oil over medium heat.
- Add pecans.
- Cook and stir for 30 seconds.
- Add drained beans.
- Heat and stir for 1 to 2 minutes more or until nuts are toasted and the beans are just heated through.
- Makes 6 servings.
