Green Beans with Pecans

Ingredients

  • 1 lb  fresh green beans
  • 1/2 tsp finely snipped dried chipotle pepper
  • 2 tsp garlic-flavored olive oil
  • 1/2 cup pecan halves, coarsely chopped

Method

  1. In a saucepan cook fresh green beans and chipotle pepper, covered, in a small amount of lightly salted water for 5 to 10 minutes or until just crisp-tender.
  2. Drain.
  3. Meanwhile, in a large skillet, heat oil over medium heat. 
  4. Add pecans. 
  5. Cook and stir for 30 seconds. 
  6. Add drained beans. 
  7. Heat and stir for 1 to 2 minutes more or until nuts are toasted and the beans are just heated through. 
  8. Makes 6 servings.
  9. Enjoy!
