Marinated Mushrooms

Ingredients

  • ½ cups olive oil
  • 8 cloves garlic cloves, peeled and halved
  • 2 lbs. mushrooms, halved
  • ¼ cup fresh parsley, chopped course
  • 1½ cup dry white wine
  • ¼ cup fresh lemon juice
  • 2 tbsp. red wine vinegar
  • 2 large bay leaves
  • salt & pepper to taste

Method

  1. Heat oil over low heat until just warm, add garlic. 
  2. Sauté until golden.
  3. Add remaining ingredients and simmer for 8 minutes.
  4. Transfer to container, cover and chill until cooled.
  5. Enjoy!
