Sautéed Potatoes with Oregano and Lemon

Ingredients

  • 5 med potatoes, sliced .25" thick rounds
  • 5 cups vegetable oil, for sautéing
  • ¼ cup olive oil
  • 3 tbsp. fresh lemon juice
  • 2 cloves garlic, crushed
  • 1 pinch chili flakes
  • 1½ tbsp. oregano, chopped course
  • salt & pepper to taste

Method

  1. In a Bowl, combine everything except the potatoes and vegetable oil.
  2. Sauté the potatoes in batches with the oil until browned, place in bowl.
  3. After all the potatoes have been cooked, toss with seasoning mixture.
  4. Serve at once.
  5. Enjoy!
