Rosemary Baked Red Potatoes
Ingredients
- 2¼ lbs red potatoes, washed and chopped in wedges with skins on
- ¼ cup shallots, finely chopped
- 2 tbsp rosemary sprigs, chopped
- 2 tbsp olive oil
Method
- Heat oven to 350°F. Spray shallow rectangular pan, with nonstick cooking spray.
- Place potatoes in a bowl and sprinkle with shallots and rosemary.
- Drizzle with oil; stir to coat.
- Place potatoes in pan.
- Bake uncovered about 45 minutes, stirring occasionally, until potato skins are crisp and potatoes are tender.
