Spaghetti Squash Latkes

Ingredients

  • 1 cup Spaghetti squash, cooked and scraped
  • 1 cup Russet potato, shredded
  • 1 cup Zucchini, shredded
  • 2 Eggs
  • 1 Tbsp. Cornstarch
  • 2 Tbsp Chopped chive and parsley

Method

  1. Pre-heat pan on medium heat with 1 tbsp. each of butter and oil.
  2. Combine all ingredients and season to taste.
  3. Drop by tablespoons into preheated pan and cook til golden brown and set, turn over and cook a further 2-3 minutes til done
  4. Enjoy as a starch or vegetable alternative with your favorite meal.
  5. Remember to cook with love!!!!
