Stuffed Mushrooms

Ingredients

  • 4 large mushrooms
  • 1 slice white bread
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh oregano, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 clove garlic
  • 100 grams cheddar cheese, grated
  • salt and freshly ground black pepper
  • 50 grams butter
  • olive oil

Method

  1. Wipe the mushrooms clean and cut off the stalks. 
  2. To make the herby  breadcrumbs, process the trimmed mushroom stalks in a food processor with the slice of bread, herbs and garlic. 
  3. Mix the breadcrumbs with the cheese. 
  4. Season to taste.
  5. Put equal amounts of butter in each mushroom, brush the outside of the 
    mushrooms with oil and cook on the barbecue for about 4 minutes.
  6. Remove the mushrooms from the barbecue. 
  7. Pack each mushroom with the herb and cheese mixture. Place the stuffed mushrooms on the grill and barbecue for about 4 minutes.
  8. Serve and enjoy!
