Vegetarian Burgers
Ingredients
- 2 cloves garlic, peeled
- 3 cups cups cooked pinto beans
- 2 tbsp light mayonnaise
- 1 tbsp chili sauce
- 2 tsp lime juice
- 2 tbsp plain dry bread crumbs
- 2 scallions, thinly sliced
- ½ tsp pepper
- ¼ tsp salt
- 2 tbsp flour
- 4 tsp vegetable oil
- 4 hamburger buns, toasted
- 4 Lettuce leaves
- 4 slices each of tomato and red onion
Method
- In a small pan of boiling water, cook the garlic for 4 minutes to soften.
- In a large bowl, mash the garlic, beans, mayonnaise, chili sauce, and lime juice with a potato masher or fork.
- Stir in the bread crumbs, scallions, pepper, and salt.
- Shape into 4 patties.
- Dredge the patties in the flour, shaking off the excess.
- In a large non-stick skillet, heat the oil over moderate heat.
- Sauté the patties for 3 minutes per side or until browned and crisp on the outside and heated through.
- Place the burgers on hamburger buns and top each with lettuce tomato, and onion.
