Vegetarian Burgers

Ingredients

  • 2 cloves garlic, peeled
  • 3 cups cups cooked pinto beans
  • 2 tbsp light mayonnaise
  • 1 tbsp chili sauce
  • 2 tsp lime juice
  • 2 tbsp plain dry bread crumbs
  • 2 scallions, thinly sliced
  • ½ tsp pepper
  • ¼ tsp salt
  • 2 tbsp flour
  • 4 tsp vegetable oil
  • 4 hamburger buns, toasted
  • 4 Lettuce leaves
  • 4 slices each of tomato and red onion

Method

  1. In a small pan of boiling water, cook the garlic for 4 minutes to soften. 
  2. In a large bowl, mash the garlic, beans, mayonnaise, chili sauce, and lime juice with a potato masher or fork. 
  3. Stir in the bread crumbs, scallions, pepper, and salt. 
  4. Shape into 4 patties.
  5. Dredge the patties in the flour, shaking off the excess. 
  6. In a large non-stick skillet, heat the oil over moderate heat. 
  7. Sauté the patties for 3 minutes per side or until browned and crisp on the outside and heated through.
  8. Place the burgers on hamburger buns and top each with lettuce tomato, and onion.
