Chilled Chicken Breast with Fruit and Curry Dip
Curry Sauce - Batch Recipe
Ingredients:
- 4 litres mayonnaise
- 10 oz. water
- 3 oz. curry powder
Method:
- Bring water to a boil and add the curry powder, stir.
- Remove from heat and let rest until like warm.
- Add curry liquid to mayonnaise and mix well.
- Chill until ready to serve.
Yield 50 x 3oz. servings
Chilled Chicken Breast - Serving Recipe
Ingredients:
- 5 oz. boneless chicken breast
- 3 oz. Curry Sauce (see above recipe)
- 1 pear or red delicious apple
- 1/8 honeydew melon
- 1/8 cantaloupe melon
- 4 oz. seedless grapes
- 1/4 kiwi
- 2 strawberries
- 1/2 oz. raisins
- 1 tsp chopped parsley
Method:
- Season
chicken breast with white pepper. Cook in
moist heat at 350ºF until internal
temperature reaches 160ºF. Chill until
ready to assemble.
- Slice
chicken breast on an angle to display
according to picture.
- Cut pear
on angle to prevent rolling.
- Display
fruits and serve with curry sauce
according to picture.
